Happy May!!!!  It is HOT HOT HOT here…about 80 degrees today!!!

Now, in Texas, where I’m from, that would be considered a cold front…ha, ha….just kidding…BUT…seriously…here in WA 80 degrees is summer weather!!!  Plus, we don’t have air conditioning in our house so it gets pretty steamy in there sometimes.

So, guess what I like to do on a HOT summer (or May) day?  Have a COLD treat!!!

There’s nothing better than a big bowl of ice cream to make you feel just like a kid again…but here’s the problem…that stuff makes my stomach feel all funny and queasy.

But, guess what???  I have a FIX for that…a 21 Day Fix!!!!  Here are some homemade ice cream treats that aren’t even really cheats…because they are a healthy version of your favorite ice cream!!!

Here’s why I LOVE these recipes!!!!

Chocolate-Peanut-Butter-Shakeology-Ice-Cream-Roundup_c138ql

Chocolate Peanut Butter Shakeology Ice Cream

Serves: 2 servings
Ingredients
  • 1 medium banana, cut into chunks
  • ½ cup unsweetened almond milk
  • 2 scoops Chocolate Shakeology
  • 2 Tbsp. all-natural smooth peanut butter
Instructions
  1. Place banana in plastic bag; freeze for 4 hours, or until completely frozen.
  2. Place almond milk, bananas, Shakeology, and peanut butter in blender (or food processor); cover. Blend until smooth.
  3. Serve immediately.

1 RED, 1 PURPLE, 3 TSP

Mint Chocolate Chip Shakeology Ice Cream

Mint-Chocolate-Chip-Ice-Cream-Roundup

Yield: 2 servings

Ingredients:
1 medium banana, cut into chunks
¼ cup canned lite coconut milk
¾ cup fresh spinach
½ tsp. pure vanilla extract
⅛ tsp. pure peppermint extract
¼ cup mini chocolate chips

Preparation:
1. Place banana in plastic bag; freeze for 4 hours, or until completely frozen.
2. Place coconut milk and spinach in blender (or food processor); cover. Blend until smooth.
3. Add frozen banana and extracts. Blend until smooth.
4. Add chocolate chips; mix well with a spoon or rubber spatula.
5. Pour into a freezer-safe container; freeze until set.

1 GREEN, 1 YELLOW, 1 PURPLE

Raspberry Banana Ice Crème

Yield: 2 servings

Ingredients:
2 medium bananas, cut into chunks
½ cup whole raw cashews
1 cup hot water
3 cups fresh (or unsweetened frozen) raspberries
Water (optional)

Preparation:
1. Place banana in plastic bag; freeze for 4 hours, or until completely frozen.
2. Place cashews in a medium bowl. Cover with water. Let stand for 30 minutes; drain.
3. Place drained cashews, frozen banana, and raspberries in blender; cover. Blend until smooth. Add water, 2 Tbsp. at a time, if needed for consistency.
4. Pour into a freezer-safe container; freeze until set.

2 PURPLE, 1/2 BLUE

 

Cherry Chocolate Chunk Ice Cream

Servings: 2

Ingredients:
1 medium banana, cut into chunks
¼ cup unsweetened almond milk
1 cup frozen organic pitted cherries,
chopped, divided use
2 Tbsp. dark chocolate chunks, coarsely chopped

Preparation:
1. Place banana in plastic bag; freeze for 4 hours, or until completely frozen.
2. Place almond milk, ½ cup cherries and frozen banana in blender; cover. Blend until smooth.
3. Add remaining ½ cup cherries and chocolate; mix well with a spoon or rubber spatula.
4. Pour into a freezer-safe container; freeze until set.

1/2 YELLOW, 2 PURPLE

Vanilla Peanut Butter Banana Ice Cream

Beachbody-Blog-Vanilla-Peanut-Butter-Ice-Cream

Serves: 5 servings, about ½ cup each
Ingredients
  • 1 cup nonfat milk (or unsweetened almond milk)
  • 2 scoops Vanilla Shakeology
  • 2 medium frozen bananas (cut into chunks before freezing)
  • 2 Tbsp. all-natural smooth peanut butter
Instructions
  1. Place milk, Shakeology, bananas, and peanut butter in high-powered blender (such as a Vita-Mix); cover.
  2. Blend on low for 5 seconds; increase power to high and continue blending for 30 seconds until smooth.
  3. Pour mixture in a large glass bowl; cover.
  4. Freeze for 4 hours, stirring every 30 minutes, before serving.

1/2 RED, 1/2 PURPLE, 1 TSP
